Vincent Marinkovich, M.D.
Dr. Marinkovich, an immunologist practicing at Stanford Medical School, was one of the first doctors to consider the negative of building mold on humans. He was the author of a 2004 journal paper on the topic. His low-mold diet focuses on avoidance of fungi themselves (such as are present in cheese, wine, beer and other aged foods) rather than mycotoxins, and may be helpful for those patients with allergic reactions to mold. He died in 2007 of gall bladder cancer.
